One of the most important dishes of any New Year's festive table is a puff salad, herring under a fur coat. According to the classic recipe, it is prepared in layers soaked in mayonnaise from: potatoes, onions, carrots, beets and, of course, the herring itself. There are various variations of this dish with the addition of apple or cheese, but today we will cook that very classic herring under a fur coat familiar to us from childhood.

The main ingredient is, of course, the herring itself or its fillet. I prefer to use, so to speak, a natural product, and not a semi-finished product, because the more energy and soul you put into the dish, the tastier it turns out.

The herring must be cut, bones removed and cut into small pieces as in the photo.

Boil the vegetables in their uniforms for about half an hour, until they are soft enough.

Peeling beets, potatoes and carrots is very easy, you don't even need a knife.

Put the potatoes in the first layer. To do this, grind it on a medium grater and distribute it in an even layer, and then grease it with mayonnaise. Here you need to make a little clarification, if you use a little mayonnaise, then the layers: potatoes, carrots and beets need to be slightly salted - I did just that.

Put finely chopped onions on a potato pillow and also coat with mayonnaise.

The next layer is the cooked herring fillet, which must be spread over the onion in an even layer.

Boiled carrots, as well as potatoes, are rubbed on a medium grater, put on top of the herring and coat with mayonnaise.

The final layer is grated beets, which must also be soaked with mayonnaise and smoothed as in the photo. For smoothing, it is best to use a regular tablespoon.

So we have prepared our very real herring under a fur coat, which is not a shame to serve at any festive table, especially on New Year's.

Not difficult, affordable and very tasty!

2 medium boiled beets
1 large boiled carrot
2 medium boiled potatoes
100 g cream cheese (I took Cream Bonjur)
150 g mayonnaise
1 lightly salted herring
5 gr. gelatin

Soak gelatin in ¼ glass of cold water, let it swell and dissolve in a water bath until it is completely dissolved (do not boil).

Cool and mix with mayonnaise.
Grate the beets on a fine grater.


Also grate the carrots.
Potatoes - on a coarse grater.


Cut the herring into pieces (after peeling and removing the bones).
Spread cling film on the table (in several strips, preferably in several layers).

Add 3-4 tablespoons of the mayonnaise-gelatin mixture to the beets, mix and lay on a film (rectangular layer).
The next layer will be cream cheese, in which you also need to add 2-3 tbsp. mayonnaise-gelatin mixture.
Attention! Each subsequent layer of food should be smaller in area.


The next layer is potatoes, in which you also add 2-3 tbsp. mixtures.
After the potatoes, there is a layer of carrots (with 2-3 tablespoons of the mixture).


Put pieces of herring fillet in the middle of the carrot layer.
Now carefully, holding the edges of the film on both sides (it is better for someone to help you at the moment), roll all our layers into a roll (with a little effort).

Wrap the edges of the film. Now you need to wrap the roll in foil and put it in the refrigerator for several hours.
Cut with a sharp knife.

My comments.

  • It would be nice to put finely chopped dill on the film with the very first layer (up to the beets) (this is for beauty, and it’s delicious).
  • It is better not to cut the herring fillet into pieces, but cut into long strips along the length (this will be more convenient when cutting portioned pieces).
  • Be sure to add some salt to the beet, potato and carrot layers.

Recipe 4: herring under a fox fur coat

The originality of this salad, in addition to the fox fur coat, is also given by the mushrooms that are part of it, which, according to the principle of “do not spoil the porridge with oil,” add their characteristic aroma to the salad.

We take the products necessary for the preparation of the salad:

  • Herring (lightly salted) - 1 fish,
  • Champignons (frozen or fresh) -250 gr.,
  • Potatoes (boil) - 3 pcs.,
  • Carrots - 1 pc.,
  • Onions - 1 pc.,
  • Mayonnaise,
  • Vegetable oil for frying mushrooms and carrots with onions,
  • Salt.

We cook the herring, for this we gut it, clean it of bones and skin.

Then cut the herring into small pieces and lay out in the first layer. Can be stacked in one dish or in two (at your discretion)

Fry the champignons in vegetable oil until cooked and put on top of the herring with a second layer

Grate boiled potatoes on a coarse grater on top of the mushrooms, lightly salt and grease with a thin layer of mayonnaise

Rub the carrots on a coarse grater, finely chop the onion.

Mix the grated carrots with onions and fry in a pan in vegetable oil. Then put on top of the potatoes greased with mayonnaise.

Grease the carrots with mayonnaise and the herring salad under a fox fur coat is ready. Bon Appetit!

Recipe 5: lazy herring under a fur coat

Purchased herring in jars is not always tasty. Then I make a salad like this

  • Beets (boiled) - 2 pieces
  • Herring (how much to eat, from a jar or salted)
  • Mayonnaise (to taste)

Peel and grate the boiled beets.

Finely chop the herring. If it is from a jar, then it is good to drain the brine or marinade.

Stir the herring with the beets.

Season with mayonnaise to taste. Of course, this salad did not stand next to a real herring "under a fur coat", but at work or outdoors it leaves very quickly.

Recipe 6: the original herring under a fur coat from Ulrika

This recipe has been in our family for as long as I can remember, so to speak, the taste of childhood. It is juicy and not as greasy as usual, and the top layer is not the usual beet, but the yolk.
The recipe went to my mother in the 80s, she then did not like the usual “Fur coat”, and the employee treated her to hers and said that “even those who don’t like herring eat my fur coat!”
Oh, how right she was!

So, more to the point, let's get started:

1 layer: Finely cut herring -1 medium into cubes,

Layer 2: onion - finely chop, and now grease not with mayonnaise, as everyone is used to, but marinade(0.5-1 tsp of ready-made mustard, a little sugar, 0.5-1 tsp of vinegar 9% and 1 tbsp of refined sunflower oil - mix everything thoroughly), try and adjust the advice marinade to your taste, since both mustard and vinegar are different, a little sharper, a little sour ...

3 layer: boiled potatoes in a uniform -2pcs-three on a vegetable grater and again grease not with mayonnaise, but slightly odorless sunflower oil,

4th layer: boiled beets -1 pc - on a vegetable grater - grease with mayonnaise,

5 layer: raw carrots -1 pcs three on a fine grater, greased with mayonnaise,

6 layer: 1 apple (ideally Simerenka) or another sour - three on a vegetable grater, mayonnaise on top,

7 layer: whites of 2 eggs on a coarse grater, svehu mayonnaise,

Layer 8: yolks of 2 eggs on a fine grater. Do not lubricate with anything.

It is insisted for at least a couple of hours, better is the night in the refrigerator, everything can be enjoyed

Tip: if the vegetables are too juicy: beets, carrots or an apple, it is better to remove excess juice, in puff salads, it can give wateriness. I rub such vegetables in a separate bowl, if they let the juice go, this can be seen already for a minute or two. I never salt the vegetables in the salad itself (but only during cooking), mayonnaise is enough for me. Salt also contributes to such incidents.

Recipe 7: Diet herring under a fur coat

Firstly, this dish is high in calories due to the high content of mayonnaise, eggs and fatty herring, and secondly, in this salad we will find a high concentration of salt - the first product prohibited by any diet.

All the ingredients of the modified salad are for women who prefer to see low-calorie and balanced foods in their diet.

  • - low-fat cottage cheese or cottage cheese with a fat content of not more than 2% - 100 gr.
  • - egg - 1 piece
  • - carrots - 1 piece
  • - beets - 1 piece
  • - mustard - half a teaspoon
  • - Atlantic herring, slightly salted - 75 gr.

Boil beets and carrots in their skins without adding salt;

Boil a hard boiled egg;

Grate vegetables and egg, cut herring into small cubes;

Lay out the products in the following layers: 1 layer - carrots, 2 layer - herring, 3 layer - beets, 4 layer - egg. Coat each layer with a mixture of cottage cheese and mustard.

Chill the prepared salad in the refrigerator before serving.

The new salad will turn out to be a real work of art if you decorate it with herbs, grated cheese or an apple.

Herring in a new role, with an apple. In the classic recipe, many put onions, but here I would not recommend that to you. Try to cook it. The salad turns out to be tender, juicy and very, very tasty.

slightly salted herring 1-2 pieces (depending on guests)
4 medium potatoes
3-4 chicken eggs
3 medium carrots
3 medium green apples
3-4 beets
salt to taste
mayonnaise

Boil potatoes, carrots, eggs and beets until tender. If you have a double boiler, cook all the vegetables in it, so you save more vitamins and spend less time. Herring skin, fins, and bones. Finely chop the herring flesh.

Peel potatoes and grate on a medium grater, place on the bottom of the dish in which you will serve salad "Herring under a fur coat"... Lay the chopped herring on top of the potatoes. Brush with mayonnaise.
