Hello everybody! I decided to write about the creation of my own smokehouse, which I use all year round. In my opinion, the use of an electric smokehouse is much more convenient than a conventional one that uses an open fire to heat it. I loaded wood chips, products for smoking, plugged it in, and all that was left was to wait a little. Well, it all started with the fact that I came across an old electric titanium. Throwing away a thing that has served its time is not a tricky business, but it is more difficult to do so that a thing that seems unnecessary at first glance becomes useful. The idea came when they once again decided to smoke a fish. Before that, we smoked in an enamel bucket on an electric stove. And in winter, I also had to insulate the bucket, so that it was easier to maintain the desired temperature inside. A factory insulated water heater flask is almost ideal for making an electric smokehouse.

We start the rework, for which we need:

Carefully remove the upper part of the casing from the former water heater, which will later become the lid for the smokehouse. We drill a hole in the lid for installing a kitchen thermometer, with which it is easier to control the temperature inside when smoking.


Next, we clean off the insulation to the side walls. We weld the legs from pieces of corners or what is at hand - this is not important, the main thing is that the structure is stable. On the other side of our design, we cut off the casing together with the bottom of the flask.


We got a cylinder on the bottom, of which we set an electric ten from the tile of 1 kW. - this power is quite enough. To do this, we drill holes in the bottom of the smokehouse according to the size of the shade.


It is desirable that the terminals of the electric heater are located on the outside of the bulb. Inside, the high temperature and wire insulation will break and melt. Even if the wires are placed in ceramic tubes, the copper strands will break off and the contact connection with the tena terminals will be broken.


Such a connection is more reliable and there will be no heating of the wires.


We are looking for a container for collecting fat that is suitable in diameter.


In order for the bowl to be at a distance from the heating element, a wire crosspiece had to be welded.


In the upper part of the flask, we drill holes for skewers, on which products will be hung in the future. The skewers themselves are made of wire with a diameter of 4 or 5 mm.

Before making a smokehouse, you need to decide on smoking method products. It comes in two types - hot and cold.

Cold smoking allows you to preserve the appearance of products and their taste. The main disadvantage of this method is that it is time consuming. In this case hearth is established separate from the camera, in which the cooking process will take place.

One of the options - at some distance from the smokehouse, a hole is pulled out, in which a hearth will be arranged.

It is connected to the chamber with the help of a chimney. The length of the chimney in this case is 2.5-3 meters... It is organized as follows: a trench is dug, depth which is 0.3 meters, a width0.5 meters.

A brick is fixed along its entire length. It should fit snugly to each other and be sealed with cement mortar. A metal sheet is placed on top of the trench and covered with earth.

As an alternative to bricks, you can use chimney... A damper is organized in its upper part. It is needed to control the flame of the hearth and remove excess smoke from the product.

The flue gas outlet at the junction with the chamber must have diameter 200 mm... It is necessary to ensure its tightness so that the smoke enters the smokehouse.

The process of preparing a product when hot smoked takes much less time than cold. In this case, the container with shavings or sawdust is fixed directly into an open fire... The smoke from these materials must go into the food chamber during combustion. A container for collecting fat from products is fixed under them. Holes are made in the chamber or a chimney is organized through which excess smoke will escape.

When a decision has been made about who needs a smoking chamber, you can start creating it.

Preparation of materials and tools

To make a smokehouse, you will need:

  • materials for making a camera... This can be wooden boards, plywood, an old gas stove, etc.;
  • strong fittings, the diameter of which should be not less than 6 mm;
  • wire made of steel, for the manufacture of a lattice;
  • materials to create a chimney or directly herself pipe;
  • Bulgarian with a disc for metal cutting;
  • welding machine;
  • nails and hammer;
  • measuring roulette.

Made of wood

Smokehouse made of wood reminds miniature house... There are walls, a door, a roof, and a chimney. Products cooked in a wooden smokehouse are distinguished by their rich taste and aroma.

Manufacturing of the case

The body of the smokehouse is made as follows:

  • The frame of the device is a rectangular structure, height which is 2 meters, a width 1 meter... It is assembled from beams.
  • Frame on three sides gets off with boards that fit tightly to each other.
  • On the fourth side a board is installed, also hammered from boards. It should close tightly without any holes.
  • Knocks roof with a hole for a tube... If there is none, then it is simply done window so that it can be opened and closed at any time. After that, the roof is fixed to the structure.
  • Inside the structure are organized grooves for pallet and lattice... For the pallet, the grooves are made at the bottom of the structure, for the lattice - in the middle.

Important! If gaps form between the boards, then this is will negatively affect on the quality of the product. The gaps need to be sealed with tow.

How to make a lattice

For the manufacture of the lattice, an unpainted wire with a diameter of 5-6 mm... From it is executed frame, the size of which corresponds to the internal size of the smoker. Pieces of wire with a diameter of 3 mm... The distance between them is 2 cm... All grill parts are welded together.

A pallet is made from a metal sheet. Its size corresponds to the size of the grate as well as the internal size of the smokehouse.

Chimney

The chimney is carried out as follows:

  • Dug out trench whose length is 2.5-3 m, width - 0.5 m, depth - 0.3 m.
  • The trench is laid out brick which connects to each other cement mortar.
  • On a brick fixed metal sheet.
  • Above the earth is filled up, layer in 15 cm so that the chimney does not freeze in winter.

Assembly

Dug out pit corresponding to the size of the smokehouse. Its depth - 40 cm... At the bottom of the foundation is laid rubble, concrete blocks are fixed along the walls with reinforcement. Further all this poured with concrete mortar... Installed on the foundation camera, inside which a tray for collecting fat from food and a grill should already be installed.

Attention! The assembly of the smokehouse begins with the arrangement of the foundation for it.

To the foundation chimney firebox

The final stage is the installation of a smokehouse. It is fixed directly to the foundation. Two structures are fastened together. The device is ready for use.

From a bar

A smoker from a bar is made in the same way as a wooden smoker, but here, instead of boards, the body is completely made of beams.

Manufacturing of the case

The body of the smokehouse is made of beams, length 1.3-1.5 m and section 20x50 or 50x50 mm... The frame of the device is formed from them. It is a rectangular box. He further on three sides sheathed with boards, section 20x150 or 25x150.

When making a case from beams, you need to decide on roof constructions. If a gable roof is assumed, then guides are made from the bars, which represent an isosceles triangle. From the top to the bottom, the median is performed.

Then done doorway... Boards are stuffed, 20 cm long from above and below. A door is fixed in the opening, a roof with a hole for a pipe is installed on top. After that, the body of the smokehouse is sheathed with clapboard. A metal sheet is laid on the roof, the hole for the pipe is not closed at the same time.

Inside the smokehouse are formed grooves for fixing the grate and pallet... For this, boards are used, the length of which is 90 cm... By using screws they are screwed onto the sides of the camera.

How to make a lattice

The grille is made of unpainted wire. First, a frame is made, the dimensions of which correspond to the dimensions of the inner space of the camera. Wires are welded to it at a distance of 4 cm apart. The grill is ready.

A tray for collecting fat from food that flows out of food when smoked is made of a metal sheet. Its dimensions correspond to the dimensions of the lattice.

Chimney

To make a chimney, you need to dig three-meter trench between the hearth and the smoking chamber, width - 0.5 m, depth - 0.3 m... It is installed chimney, which is poured with concrete mortar. A layer of earth is poured on top, thick not less than 15 cm... This will keep the chimney from freezing even in winter.

Assembly

Before a check to install a smokehouse on the site, a foundation is made for it. For this it is dug up pit, corresponding to the dimensions of the smokehouse, depth - 40 cm... The bottom of the foundation is covered rubble, concrete blocks are fixed along the walls with the help of reinforcement, after which the entire pit is filled with a solution made of cement. On him fixed camera... Inside which should already be installed a tray for collecting fat released from products when smoking, and a grate.

To the foundation chimney... At one end of it, an iron square welded from a metal sheet is fixed. It should be sized appropriately for the camera. It is installed on the foundation. At the other end of the chimney, a firebox... It should be made of refractory bricks and equipped with a metal door. This will be the place where the fire is made.

The final stage is the installation of a smokehouse. It is placed directly on the foundation. Two structures are fastened together with metal brackets... The smokehouse is ready!

Plywood

The smokehouse is made in the same way as from wood, but here plywood is used for its cladding. The disadvantage of such a device is low thermal conductivity.

Reference. In order for a plywood smokehouse to better retain heat, it is enough to make the walls in several layers and revet the structure clapboard.

Metal smokehouse made of stainless steel

The main advantages of a stainless steel smokehouse - and security use. Its size depends on the user's needs for smoked products. To provide delicacies to a small family, a rectangular compact device will be enough. To supply smoked meats to a large family, the smokehouse must be of an impressive size.

Manufacturing of the case

To make the body of the device, you will need stainless steel sheets suitable for cooking, for example, AISI 304... If, however, an old brazier made of the same metal is used as a basis, then all that remains is to close the extra holes, make a lid and grooves.

From an old gas stove

An old gas stove can be used to create a smokehouse. To make a device, in this case, you will need minimum time and effort.

Manufacturing of the case

Manufacturing of the case

To install the camera, make a hole, brick it or put a metal box there. If you put a box, then the bottom should be cut, only the walls are needed.

Make the smoking compartment from a grate, which can be made from twigs. Attach food hooks to the structure. Place a shallow pan under the grate, leaving gaps between the walls for the passage of flue gases. Stretch a wet burlap cloth over the firebox to protect food from contamination.

There are separate requirements for the container lid: firstly, it must be quickly removed and installed, and secondly, it must be hermetically closed, otherwise all the smoke will come out, and the smoking process will not occur, and the products will deteriorate.

For the construction you will need:

  • box;
  • lattices;
  • soldering iron;
  • pallet.

Consider a description of how to make a do-it-yourself smokehouse for hot smoking. To get started, take a box and weld grates to it, one or two. For a large number of products, a tray is placed under the bottom, which is necessary for the fat to drip off. Without a tray, grease from food will drip onto the coals and impart undesirable odors and harmful substances.

Dig a hole that fits the size of the box, and line it with bricks. Put firewood on the bottom, which, when burned, emit smoke for smoking. Hard varieties such as pear, apple, oak are suitable. Finely sawn pieces or sawdust are laid down, which should be ignited. Place the food on the wire rack and place it on the wood, which should be smoldering. The main thing is that the temperature is high, since food will not cook at low temperatures.

The cooking process takes about 2 hours. After the first hour, remove the structure and check the heat. In low heat, add wood and continue cooking. A homemade smokehouse, built with your own hands, prepares food as tasty as cooked meals in storehouses.

The layer of wood is laid evenly. You can't stack a bunch. For quality cooking, it is best to stack the food in one layer.

If you do not have a box for a smokehouse, you can use a large pot or barrel at home, but then you need suitable grates. Hooks can also be used in the barrel. To do this, weld a few twigs on top and attach hooks to them. Food in this position is prepared in the same way as on the wire racks.

Thus, a self-built smokehouse can be used for horizontal and vertical smoking of food.

We mark with chalk the places for the two rectangular holes, for the door and for the firebox, and cut them out. We position the device so that the hole from the heating element is at the top. We weld the mesh from the fittings from below, weld the holes from the pipes.

We weld canopies on the doors, small strips of metal so that they do not fall through and a small latch. We fix the corners from below as supports. To extract the hole for the heating element in place, cut out a circle along the diameter of the ventilation pipe.

  • Washbasin from a leaking water heater. We take out the tank, cut off the water inlet and outlet pipes and the upper part. We eliminate the leak by brewing it. We clean the container and paint with enamel. At the place where the pipes were located, we weld the crane.
  • Trash bin. You can make a beautiful urn out of the body. We cut off a rectangular piece of the casing and make cuts evenly from below, 20 centimeters each, and bend them. We twist it into a pipe and fasten it with rivets.
  • A place to grow vegetables... Having cut the container along, we get two convenient flower beds, welded supports to them and filled with earth.
