Beat two eggs into a deep bowl, add sugar and grind.

Any jam is suitable for the dough - both thick and liquid. It is very good to use a product that has already slightly fermented. It has a good sourness, which interacts well with baking powder or soda, and the dough rises wonderfully when baking. So, pour jam into the egg mixture and add soda. Stir. The baking soda will react and the mixture will begin to foam a little.

Add sifted flour and stir.

Add fat to the dough. This is pork lard. It’s better, of course, that it be homemade. By the way, lard can be perfectly melted from pork internal fat. When heating, be sure to lower the peeled onion into it. When fried, it will take away a slight specific smell. Dough products with the addition of lard do not go stale for a long time (up to 3 weeks) and have a pleasant taste. There is absolutely no lard smell.

Mix well. If the jam was too thick and the dough turns out to be very dense, you can add a little of any liquid - milk, kefir, fermented baked milk or water. Stir well. The dough is ready.

  • vinegar for extinguishing;
  • jam – 300 g.

Cooking method:

  1. Grate the frozen butter on the coarse side of a grater. To prevent it from melting in your hands, hold it with a plastic bag.
  2. Add the sifted flour, mix with a knife, making chopping movements: this way the butter will remain cold.
  3. Add sugar, separately beaten egg, slaked soda, mix with your hands, but do it very quickly.
  4. Divide the dough into 2 unequal-sized parts, put both in the freezer for an hour.
  5. Line the baking dish with parchment, making 2 sides out of it - it will be convenient to take out the hot pie without damaging anything.
  6. Grate most of the dough on the coarse side of a grater and fill the bottom of the mold with these shavings. Press it very lightly so that it does not form a too dense, homogeneous layer. But at the same time, make sure there are no gaps.
  7. Spread the jam onto the dough, spreading it as evenly as possible.
  8. Cover the top with shavings from the smaller part of the dough, also grated on the coarse side of a grater.
  9. Place the pan in an oven preheated to 200 degrees and bake for 20-25 minutes. The hot pie is cut into squares and served cooled.

Grandma's yeast pie with jam in the oven

No matter how attractive pies made with shortcrust pastry, unleavened sour cream or liquid kefir may be due to time savings, the most beautiful and tender are those made with yeast.   • jam – 300 g;
  • starch - 1 table. spoon.

Cooking method:

  1. Mix the yeast with sugar and a spoonful of flour.
  2. Add warm (not hotter than 40 degrees) milk and stir.
  3. Add the beaten egg.
  4. Melt the butter, let cool slightly and add to the dough.
